Dryness is an essential element of the Pistachio tree’s DNA. This plant is capable of adapting itself to impervious and inaccessible soils. It could even grow on rocks. It is upredictable and whimsical. Therefore, the quantities of pistachios we produce are variable and subjected to the mood of the King of the countryside, the green gold of the ancient Sicani people.
We hand-pick each pistachio as it is extremely difficult to adapt mechanical machinaries to the multiform trunk of this tree.
